Greek Lemon Feta Chicken

Easy Keto Lemon Chicken

Looking for a quick, easy, dinner with minimal clean up for summer? This easy Greek lemon feta chicken is packed with savory flavor that the whole family can enjoy, and it all comes together on one sheet pan. With so few ingredients, you can make this dish quickly and easily.

Ingredients:

2 lbs boneless skinless chicken thighs

2 teaspoons oregano

2 cloves garlic chopped

Lemon juice from 1/3 of lemon

¼ cup olive oil

1 cup olives

1 medium zucchini

6 ounces feta

8 cherry tomatoes

Directions:

Marinate chicken in garlic, lemon juice, olive oil and oregano, salt and pepper for at least 30 minutes or up to overnight in the refrigerator.

Roast chicken at 425 degrees with feta, olives, zucchini, whole cherry tomatoes on one baking sheet and bake for 40-45 minutes.
